How to Make Strawberry Peels – Step by Step
First prepare strawberries. If you use fresh berries, remove the top and cut it in half, or if they are bigger, cut it into quarters. If you are using frozen berries, make sure they thaw.
Place berries, lemon juice and sugar in a pot over medium heat. Cook until tender and release the juice, about 10 minutes. The berry mixture is then carefully transferred to a food processor or high-speed mixer and the puree is completely transferred to the puree. If you prefer, taste and mix more sugar.
Place silicone pads or parchment paper on a baking tray or prepare a dehydration tray. Spread the strawberry mixture on a baking tray or tray so that the edges are slightly thicker than the center. We found that using offset scrapers makes this task easier.

- Heating strawberries may be an unnecessary extra step, but it is an important step. The heating process releases extra pectin, which will make your fruit leather more elastic, elastic texture.
- If you are making homemade fruit rolls in the oven, we recommend using a silicone baking mat. It makes peeling off dried fruit leather an absolutely breeze.
- Offset spatula makes your fruit leather puree super spread.
- Make the edges of the fruit leather slightly thicker than the center. Your strawberry rolls will dry from the outside, so adding a little to the edges will help do all the work at the same time.
- After laying out the puree, rotate the offset scraper side and push the puree back to create a clean edge (such as squeezing) to sort out the edges.
- If the edges end up being too dry or crispy and crack when you try to peel it off the tray, try drying the spots with a damp paper towel. This will help increase enough moisture to make it flexible again.
Storage Tips
- Up to 2 weeks: If you are only planning to store fruit leather for a few weeks, you can place them on the counter of a Ziploc bag or resealable container. But be careful to seal them; excessive contact with air will dry them.
- Several months: For longer storage space, roll the fruit in an airtight mason jar and store it in a cool, dark place. They will last for months!

Dehydrate for a few hours until the fruit leather is no longer cheesy and can be divided into pieces (about 3 hours, in the oven or 4½-5 hours, dehydrator1).

Transfer the leather to a piece of parchment and roll it up. Cut into snack-sized pieces with a pair of scissors.

Store sealed containers or zippered bags for up to several weeks.
