Takahisa, Dubai’s most important Japanese cooking destination, will welcome one of the most respected names in Hain Ducasse’s fine cuisine. In just one day, the legendary French chef with an amazing 21 Michelin stars will team up with the groundbreaking culinary team of Highland Island, led by chefs Takashi namekata and hisao ueda.

Inspired by the Japanese philosophy “Ichi Go Ichi e” (one issue, one meeting), this once-in-a-lifetime encounter is a celebration of precision and art, where the best Japanese technology fits the legacy of French cooking excellence. Ducasse’s terroir-driven approach will blend seamlessly with Takahisa’s expertise in Sushi and Wagyu, even the most discerning textures.

Ducasse’s longtime collaborator and visionary of modern cuisine, Romain Meder will join the esteemed trio to further enhance the experience. Together, these four cooking masters will push the boundaries of flavor, technology and creativity.

This collaboration strengthens Dubai’s position as a global dining powerhouse, with the Highland Island at the forefront of evolution in the region. Over the past few years, Gakkizaki welcomed the highly acclaimed international chefs, fostering cross-cultural exchanges and cementing her reputation as a hub of gastronomy excellence.
